Apple & Cinnamon Cake



1 cup sugar
125g butter
1 egg
1/2 cup Mill Orchard apple juice
1/2 tsp baking soda
1 1/2 cup flour
1 1/2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
2 medium Mill Orchard apples

Cream butter and sugar. Add the egg and mix well.
Warm the Mill Orchard apple juice in the microwave for 20 seconds
and add the baking soda (careful as this will foam up quickly once the soda has been added).
Add this to the mixture, then add  sifted flour,
cinnamon, baking powder and salt. Mix in by hand the finely
diced Mill Orchard apples. Place the cake batter in a greased
20cm lined cake tin. Bake for 50 minutes at 180oC or until a skewer
inserted into the cake comes out clean. Serve dusted with icing sugar
and whipped cream.(This cake is a family favourite :-)
